Ground Beef and Zucchini Casserole

Ingredients
1 lb ground beef1/2 cup onion, chopped1/2 celery, chopped6 cups zucchini sliced1 cup mushrooms1 cup mozzarella cheese, grated1/2 cup colby-jack cheese, grated
Directions
Brown ground beef with celery and onion. Drain well and rinse. Add zucchini and mushrooms. Simmer on low until zucchini is done. (I like mine tender-crisp). Add cheeses and remove from stove burner. Cheese melts and ready to eat. Makes 6 servings.

    Substituted ground turkey and added 4 cloves of garlic. Sautéed onions, celery, and 1c diced carrots for about 5 min before adding turkey and garlic. Not a mushroom fan so I left them out. Super yummy! Going in regular rotation. Next time I will 1/4 the zucchini slices to make it more kid friendly - 10/25/11

    very good - i added half can of diced tomatoes, broccoli and subbed ground turkey. once it was all cooked, i put chopped lettuce on top of the entire skillet and put a cover on for 4 minutes, wilted it, then sprinkled the mozzarella on top. mine came out watery, but it was delicious! - 8/11/11

    This was a spectacular base recipe to jump from. I added 2 cans of diced tomatoes, fresh chives instead of onions, skipped the mushrooms and celery and added 1/4 cup parm. cheese to the mix. When serving I added a sprinkle of sharp cheddar on to of each serving. Spectacular and full of flavor. - 7/21/11
