Oatmeal Cranberry Muffin Minis

Ingredients
Cinnamon, ground, 1 tbsp Craisins, 1 cup Old Fashioned Oats, 1 cupWhole Wheat Flour, 1 cupBrown Sugar, .25 cup, packed Splenda, .25 cupBaking Soda, .25 tsp Baking Powder, 2 tspSalt, .25 tspApplesauce, unsweetened, 1 cupVegetable Oil 4 tbsp egg white, fresh, 2 large Vanilla Extract, 1 tsp (remove)
Directions
Preheat Oven 400 degrees
Line Mini Muffin Cups or Spray with Pam

Combine dry ingredients in medium bowl (Oats, Flour, Sugar, Splenda, Cinnamon, Baking Soda, Baking Powder and Salt). Add cranberries.

Mix egg whites, applesauce, oil and vanilla. Add to dry ingredients and mix just until moistened.

Fill mini muffin cups and bake for 12-15 minutes.

Makes 20 mini muffins.
