Indian Style Black Beans

Directions
2 medium onions, diced3 cloves garlic1 tsp cumin1 tsp ground ginger2 tomatoes, diced1 tsp salt1 tsp red pepper3 cups black beans with water- use canned
Sautee the onions in the oil until they start to brown. Add the cumin, garlic, and ginger. Cook for 1-2 minutes. Add the tomatoes, salt, and pepper, and cook for another 3 minutes. Add the canned black beans (and their water). Simmer for 10 minutes to let the flavors meld.
Serve over rice or with naan or roti.
You can also add some MDH chaat masala- about 1/2 a teaspoon, and cut back on the salt.
Makes six servings.
