Tilapia with Cheese and Breadcrumbs

* 4 Tilapia fillets (about 4 oz. each)* 1/4 cup of breadcrumbs* 4 Tbsp unsalted butter* 4 Tbsp of shredded romano or asiago cheese* 2 Tsp paprika* Salt and pepper to taste
1) Preheat oven to 375 degrees
2) Salt and pepper fillets to tase
3) Chop butter into rough squares and soften in the microwave (about 15 seconds). Mix breadcrumbs, butter, and paprika together until it is the consistency of damp sand (clumpy but blended)
4) Crumble breadcrumb mixture over fillets, and top with a tablespoon of cheese on top of each fillet.
5) Place in middle rack of oven and cook for 12-15 minutes, or until fish is flaky and cooked through (overcooking will dry it out).

I thought this was a really good idea, but it needed some tweaking. I used a 50/50 ratio of plain skim yogurt and fat-free cream cheese. The yogurt cuts some of the sweetness of the ff cream cheese. I also added lemon juice, and I used coriander instead of nutmeg. I'm taking it to a potluck! - 8/7/09
