Fiesta Lime Chicken

Ingredients
4 skinless, boneless chicken breast cut in 1/23 garlic cloves1 cup salsaJuice of 1 1/2 limes1/4 cup reduced-fat ranch dressing 1 cup shredded reduced-fat Cheddar cheese
Directions
Coat a skillet with cooking spray. Place over medium heat.
Saute the chicken for three minutes per side.
Add the garlic.
In a bowl, mix the salsa, lime juice, and ranch dressing. Spread on top of the chicken. Cook another five minutes.
Sprinkle on the cheese, cover and cook until the chicken in no longer pink, about 4-5 minutes.

Makes 8 servings (1/2 breast each)

    Easy to make and my whole family loved the dish. It is also good the next day. I would recommend not adding the cheese until you are ready to serve so that the cheese doesn't melt too much. I have already made this dish twice, that's how much we liked it. Thanks! - 7/2/09

    I made this last night and everyone loved it. I got some comments about how it didn't look that pleasing to the eye, but that it still tasted great. I would maybe add some diced red tomatoes and cilantro on top to give it some color. Thanks for the great recipe! - 7/15/08

    Fantastic! Really does taste a lot like the Applebee's dish. Made my own salsa from a recipe on this site, will definitely be combining ranch and salsa for my normal salad dressing now.     YUMMO!! I used lite parmasan peppercorn ranch dressing-that's the only ranch I had. It had 2 grams of fat for every 2 tbs. So it added a few more fat grams. I pounded the chicken thin and cooked them on my Foreman Grill, then followed the rest of the recipe. The whole family went crazy! Thanks !!! - 10/12/07

    Wow! This recipe was loved by everyone. I made it with brown basmai rice and it had so much flavor my family didn't even realize I fed them "healthy" rice! I did use regular ranch dressing because I hate fat free. The only other change I'd make is I'd make a double recipe nexttime for leftovers! - 6/9/09
