Lemon balsamic whole wheat spaghetti with spinach and tomatoes

4 oz of whole wheat thin spaghetti2 cloves of garlic, diced1/2 bag of fresh baby spinach (approximately 5 oz)4 oz of fresh grape tomatoes2.5 tsp fresh black pepper2 tbsp balsamic vinegar2 tbsp olive oil
1. Boil the spaghetti for 7 minutes and set aside - drain but do not rinse
2. Saute the minced garlic on medium/high heat for 20 seconds
3 . Add the tomatoes and cover for 2 minutes
4. Add the olive oil and pasta into the tomatoes/garlic
5. Throw in the spinach and toss the pasta so that the spinach wilts in the heat of the noodles
6. Add the balsamic vinegar to the pasta and toss thoroughly
7. Add the black pepper and salt
8. Reduce to low heat and cover for 3 minutes to allow the spinach to wilt
9. Once spinach is wilted, finish with a generous squeeze of lemon
10. Toss and serve!
