Shrimp Pasta with Asparagus

Ingredients
1 1/2 pounds of shrimp, cleaned, shelled and uncooked1 pound thin asparagus cut into bite size pieces6 cloves garlic minced1/2 cup heavy whipping cream2/3 cup fresh chopped chives1/2 teaspoon salt1/2 teaspoon pepper1/4 cup butter, unsalted1 1/2 cup white wine8 oz linguine noodles
Directions
Cook linguine according to package instructions. Reserve 1/2 cup water.

Steam asparagus in a small pan or sauce pan and cut into bite size pieces, about 1 to 2 inch pieces. Set aside and keep warm.

Melt butter in a large skillet, nonstick, over medium to medium-high heat. Add shrimp and cook 3-5 minutes until almost done. Add garlic to pan and cook another 30 seconds to 2 minutes until shrimp is done and garlic is roasted. Remove shrimp from heat and keep warm.

In same pan, add wine to the pan and increase heat to high. Allow for wine to boil 2 to 4 minutes or until reduced just slightly to about 1 cup.

Add cream to wine mixture and bring to a boil. Sprinkle mixture with chives, salt and pepper. Toss cream sauce, shrimp, asparagus and noodles together. Use reserved pasta water to thin sauce if needed.

    If you launch the butter and cream, use very little olive oil and a little flour instead for the sauced you could lower the calories on this dish. - 7/28/09

    You can def. cut the butter and use nonstick cooking spray but I'd keep the cream to flavor the sauce. Also, this is based on about a two cup serving. If you have a one cup serving, you are likely to be full and cut the calories in half. Enjoy.
