Brown Rice Meatloaf

Ingredients
1 lb lean ground beef or turkey1 c. brown rice, cooked1 egg3/4 c. greek yogurt1/2 c. chopped onion1/2 c. chopped celery1/2 c. choppped bell pepper, any color1 tsp salt1/4 tsp pepper1 tsp basil1 tsp oregano
Directions
1. Preheat oven to 350. Spray a loaf pan with cooking spray and set aside.

2. Combine all ingredients by hand in a large bowl. Place in loaf pan and bake for 1 hour. Let sit 10 min. before cutting.

    OMG this was incredible. I did substitute low fat plain yogurt for the greek yogurt but I will definitely make this again. Husband loved it as well. Served with mashed potatoes made with chicken broth and yogurt, creamy and tasty and healthy. - 8/20/09

    This is good. Although brown rice has a strong flavor, it adds fullness and volume to the loaf without overpowering the flavor of the meat. We really liked it.

    I spread it out in a 8x10 pan and baked at 400. It was done in under 25 minutes. I also put tomato soup on top--good over potatoes. - 3/6/10

    To the person who questioned the sodium content. You are correct. If you eliminate the tsp of salt it is accurate. Still yummy! - 4/21/12

    I loved the recipe, however, I question the sodium info. I Googled the amount of sodium in 1 tsp of salt and came up with 2300 mg. Six servings results in 383 mg/serving (assuming no sodium added by anything else.) If I am wrong please tell me. I just want to be accurate when I track it. - 9/6/11

    This was a good recipe, just kind of bland for my taste. I used turkey instead of hamburger, so maybe that was the problem. That said, I will be making this again, I'll try putting a couple pieces of bacon on top, and maybe a few more spices. It is very filling. - 1/10/18

    We used vanilla greek yogurt with choc chunks by accident (gramps). Used orange bell pepper instead of celery along with the green pepper too... we also added sausage with the beef... next time using turkey instead of beef.

    I prepared 2 of these for a church pitch-in today, one w/turkey and one w/hamburger. They were very well received. I did add a ketchup/brown sugar/tomato paste sauce to the top, and I also added some cheddar cheese to the top of the hamburger one. I would make it again but maybe modify it a bit. - 2/10/13
