Imaginary Panda Orange Ginger Tofu

Ingredients
.25 block extra firm tofu.5 cup bell peppers chopped (about half a medium pepper)1 medium stalk celery .25 large onionjuice from one orange2 tbsp sugar free maple syrup2 tbsp low sodium soy sauce1 tsp ginger, ground1 tsp crushed red pepper flakes1 tbsp cornstarch
Directions
Cut tofu into 1/2 inch cubes and press under weight while chopping veggies. Saute onions, peppers, celery in a medium non-stick skillet, add tofu last. In a small bowl mix all other ingredients (orange juice, syrup, soy, cornstarch, and spices) into a sauce. When onions are transparent turn to very low heat and pour sauce over skillet. Allow to simmer over medium low (or low) heat at least 5 minutes.
Serve over rice or noodles (not included in nutrition calculation)
Makes one very large (1.5 cup) serving

    This was delicious! The instructions call for onion but it is not included in the ingredients, so I chose to use 1/2 onion. I also substituted carrots for celery. Will definitely be making this again! Thanks! - 8/17/09
