Michael's Couscous

Ingredients

1 tablespoon olive oil1/2 cup diced raw onion3/4 lb. diced raw lamb (can be other meat, chicken or none depending on your taste)1 14 oz can petite diced tomatoes (with garlic is good)1 14.5 oz can low sodium low fat chicken broth1 cup Israeli couscous (or other form of couscous)seasonings like curry powder, cumin, chinese five spice, minced garlic to your taste.
Place olive oil in good sized deep frying pan on medium heat.
Put onion, meat (if used), then spices in pan, and saute together for about 5 minutes. (Meat can be slightly pink as it will cook further.)
Add chicken broth and cover and simmer for five minutes.
Stir in diced tomatoes and simmer for another fifteen minutes.
Stir in uncooked couscous, cover and simmer for length of time required to cook couscous as listed on package (Israeli couscous takes 8-10 minutes and Middle East packages take 5 minutes.)
Enjoy!
This is a great potluck and can be served cold or warm.

OMG! This was Deliscious and very easy to make. I used skinless chicken thighs in place of lamb and added garlic & about 1 cup of fresh, chopped spinach about 6 or 7 min before adding the couscous. (so nutritional Info is gonna be off)
