Rise and Shine Muffins

3/4 cup ground flaxseed1/4 cup wheat germ1 cup whole wheat flour1 cup oats 1/2 cup brown sugar1 Tbs molasses1/4 cup shredded coconut2 tsp baking soda1 tsp baking powder1/2 tsp salt2 Tbs ground cinnamon1 1/2 cups shredded carrots1/2 cup unsweetened applesauce1/2 cup chopped walnuts1/4 cup dried cranberries1/4 cup raisins3/4 cup milk1/4 cup vanilla soy milk2 eggs1 tsp vanilla extract
1. Mix all dry ingredients in a bowl.
2. Add molasses, applesauce and carrots, mixing well.
3. Mix together the wet ingredients: milk, soy milk, vanilla, and eggs.
4, Add wet mixture to the dry mixture, stirring until evenly moist.
5 Add batter to paper-lined muffin cups, filling 3/4 of the way.
6. Bake at 350 for 15-20 minutes.
These muffins freeze well. I've not met a dried fruit that hasn't tasted great in this batter, so be adventurous and make this recipe your own.
