Halibut Stew with Fresh Herbs

1 T olive oil1 medium onion, finely chopped1 can (14.5 oz) petite diced tomatoes(or 6 roma tomatoes, skins and seeds removed, then chopped)pinch white pepper2 cups low sodium vegetable broth1/2 cup white wine (optional)1/3 cup ground almonds12 oz halibut fillets, cut into 1 inch cubes2 cups loosely chopped bok choy (or shredded fresh spinach)2 T fresh chopped basil (optional)1/4 cup fresh chopped parsley (optional)
Place a large saute pan over moderate heat; add oil. Add chopped onions and saute, stirring for 2-3 minutes. Don't let the onions brown. If using wine, add it to the pan, and, with a wooden spoon, scrape the bottom of the pan to loosen any onion that might have stuck. Add tomatoes and pepper; bring to a simmer. Cook for 3 minutes. Add stock and almonds; stir to combine. Add bok choy and simmer to wilt; 2 minutes. Add halibut and cook until fish becomes opaque, approx. 4-5 minutes.
If using herbs, add just before serving.
Recipe makes 6 servings with 2-3 ounces of halibut per serving. Addition of wine will add less than 10 calories per serving.
Serve this over brown rice (calories not included).

Oustanding!! I have never have a fish soup/stew. Have heard of it, but it always just sounded wierd. I am now a believer!! I made it just like the recipe said (except dried basil instead of fresh). The combination made it taste very fresh, but was still a comfort food. Thanks so much for the recipe. - 10/16/10

This was good, but it was missing something. When I ate the leftovers, I added cilantro (as CANNF suggested) and Sumac powder (a middle-eastern spice), and it was much tastier. As the recipe was originally, it tasted a little like an ordinary soup, just with fish, while I wanted some zing! - 1/19/10

I made this for my husband who does not like fish very much and is not a big soup eater. I left out the almonds and he thought it was wonderful.. I added some cooked brown rice and it gave it a littloe more substance. We ate it with some whole wheat rolls and thoroughly enjoyed the meal. - 10/20/09

I changed it a bit to use up vegetables I had. I used 1 zucchini, a very small red pepper and orange pepper, a whole portabello mushroom, chicken broth instead of veg, fresh baby spinach, cod instead of halibut, added shrimp and then dry herbs instead of fresh. My husband loved it. Will make again. - 11/14/10

I'm a bit disappointed. It's not bad, just kind of ho-hum and bland (even though I added cilantro and jalapeno peppers). At least my husband the fish-hater ate it without complaint (no praise, either, though). I probably won't be making this again. There are tastier fish recipes out there. - 3/26/10

Halibut is my favorite fish. Because of its price I am hesitant to do anything with it that is not real simple. I had some Halibut from Costco and all of the other ingredients so I decided to take a chance. This was truly wonderful. I could have eaten the broth by itself. After taste is awesome - 8/21/12

I used Shallots instead of onion. When sauteing the onions, I added finely minced garlic and jalapeno. I also took a suggestion from another reviewer and added a couple of diced yukon golds. Didn't use the almond. And used chicken broth instead of veggie broth. It was a wonderful tasty dish! - 1/18/11
