Halibut Stew with Fresh Herbs

Ingredients
1 T olive oil1 medium onion, finely chopped1 can (14.5 oz) petite diced tomatoes(or 6 roma tomatoes, skins and seeds removed, then chopped)pinch white pepper2 cups low sodium vegetable broth1/2 cup white wine (optional)1/3 cup ground almonds12 oz halibut fillets, cut into 1 inch cubes2 cups loosely chopped bok choy (or shredded fresh spinach)2 T fresh chopped basil (optional)1/4 cup fresh chopped parsley (optional)
Directions
Place a large saute pan over moderate heat; add oil. Add chopped onions and saute, stirring for 2-3 minutes. Don't let the onions brown. If using wine, add it to the pan, and, with a wooden spoon, scrape the bottom of the pan to loosen any onion that might have stuck. Add tomatoes and pepper; bring to a simmer. Cook for 3 minutes. Add stock and almonds; stir to combine. Add bok choy and simmer to wilt; 2 minutes. Add halibut and cook until fish becomes opaque, approx. 4-5 minutes.
If using herbs, add just before serving.

Recipe makes 6 servings with 2-3 ounces of halibut per serving. Addition of wine will add less than 10 calories per serving.

Serve this over brown rice (calories not included).

    I made this recipe using the suggested ingredients and it was great. The almonds thickened the sauce to my surprise and gave the dish a lovely creamy appearance. Delicious, although it is for six, try keeping them away from seconds! - 11/11/09

    I had been looking for a good simple fish soup and this is it. I did make a couple of changes; I use chicken broth instead of vegetable broth since that's what I had on hand and left out the ground almonds since I didn't have any. Hubby liked it. - 10/13/09

    Oustanding!! I have never have a fish soup/stew. Have heard of it, but it always just sounded wierd. I am now a believer!! I made it just like the recipe said (except dried basil instead of fresh). The combination made it taste very fresh, but was still a comfort food. Thanks so much for the recipe. - 10/16/10

    This is a great basic recipe. I added yellow squash, green & red pepper, & eggplant which I seared for a minute in olive oil first. I added 3 cloves of garlic and used wild perch instead of halibut. The buttery taste of perch with the garlic, wine & all the veggies was incredible. - 7/13/10

    This was good, but it was missing something. When I ate the leftovers, I added cilantro (as CANNF suggested) and Sumac powder (a middle-eastern spice), and it was much tastier. As the recipe was originally, it tasted a little like an ordinary soup, just with fish, while I wanted some zing! - 1/19/10

    I made this for my husband who does not like fish very much and is not a big soup eater. I left out the almonds and he thought it was wonderful.. I added some cooked brown rice and it gave it a littloe more substance. We ate it with some whole wheat rolls and thoroughly enjoyed the meal. - 10/20/09

    I changed it a bit to use up vegetables I had. I used 1 zucchini, a very small red pepper and orange pepper, a whole portabello mushroom, chicken broth instead of veg, fresh baby spinach, cod instead of halibut, added shrimp and then dry herbs instead of fresh.     I'm a bit disappointed. It's not bad, just kind of ho-hum and bland (even though I added cilantro and jalapeno peppers). At least my husband the fish-hater ate it without complaint (no praise, either, though). I probably won't be making this again. There are tastier fish recipes out there. - 3/26/10

    Halibut is my favorite fish. Because of its price I am hesitant to do anything with it that is not real simple. I had some Halibut from Costco and all of the other ingredients so I decided to take a chance. This was truly wonderful. I could have eaten the broth by itself. After taste is awesome - 8/21/12

    I used Shallots instead of onion. When sauteing the onions, I added finely minced garlic and jalapeno. I also took a suggestion from another reviewer and added a couple of diced yukon golds. Didn't use the almond. And used chicken broth instead of veggie broth. It was a wonderful tasty dish! - 1/18/11

    I've never actually had a fish soup before--unless you count seafood gumbo, which... I don't, b/c I've only ever had shrimp and crab in seafood gumbo. This definitely makes me want to try, and I wonder if salmon would work in it. - 12/19/12

    I don't like cooked spinach and I have no almonds or wine in the house. However I make fresh vegetable soup and can use the soup mix for the recipe. Also I don't have halibut but I do have cod and have ate red snapper before. - 10/14/09
