Banana Nut Muffins Cindys version

3/4 c. stone ground whole wheat flour3/4 c. all purpose white enriched flour2 large eggs1/4 c. ground flax seed1/2 tsp. baking soda1 1/4 tsp. baking powder1/4 tsp. salt1 tsp. vanilla extract1/4 c. sugar (scant)1/2 c. applesauce2 tbs. 1% milk1 cup mashed overripe banana1/2 c. chopped walnuts
1. Measure all dry ingredients together, mix well
2. In another bowl, mix together sugar, applesauce eggs, milk. Mix well.
3. Mix dry ingredients with wet ingredients. Add walnuts and fold together.
4. Scoop into muffin tins, either sprayed with pam or use muffin papers.
5. Bake at 350* for 30 min.

it lists eggs in the directions for recipe but its not listed in the ingredients, so how many eggs also in the directions it doesnt say when to add vanilla or bananas - 9/29/09

Sorry about that! The recipe takes 2 large eggs. I usually mix the bananas and the vanilla in with the wet ingredients, then mix the wet and dry ingredients together. Just be careful not to over mix as the muffins will be tough.
