Smoked Salmon Scramble

Ingredients
Smoked Salmon, 4 oz 1 stem of fresh dill, choppedGrade A Large Eggs, 4 servingFat Free Sour Cream, 2 tbspLaughing Cow Light Creamy Swiss Original Cheese, 1 wedgeSpinach, fresh, 1 cupSalt and Pepper to taste
Directions
Heat fat free cooking spray in skillet. Add spinach and salmon. Cook until spinach is shiny and wilted, but still a little firm. Add dill.

While spinach is cooking, beat egg and cheese together until fluffy. Add salt and pepper to taste.

Pour egg mixture over spinach and salmon. Stir frequently. Cook until eggs are desired firmness.

Serve with a tablespoon of sour cream on each serving. (Makes 2 servings.)

    I don't like salmon at ALL, but I know I should eat it, so I tried this recipe and I actually ate 2 oz of salmon! and liked it! I used 2 fresh eggs and 1/2 c Egg Beaters and made it as an omelette and it was just great. - 5/21/09

    WOW the Cholesterol is 2 times what I'm supposed to have for the entire day! and the sodium is about half of the entire day. Sounds yummy but I'll have to pass. - 6/7/09

    Just finished this great breakfast. Although we loved this, we'll probably try the same basic ideas to create an omelet using the same ingredients. It got a bit too "scrambled" for my liking and I would have liked the salmon to not have cooked as much as, but this is just personal preference. - 9/1/08

    This recipe is rich and yummy! Okay, so I substituted deli-sliced white American cheese (shiver!) for the swiss, and I added an extra egg white to half the given recipe, but it was just yummy, filling, and protein-packed.
