Ingredients
Crust:1 premade pizza crust (SparkPeople recommends whole-wheat crust)Toppings:4 slices center-cut bacon 3/4 cup (6 ounces) shredded part-skim mozzarella 1/4 cup diced red onion 1 cup pineapple chunks (fresh or canned, drained) Sauce:4 Roma tomatoes, peeled, seeded and cored1/2 tsp Italian seasoning1/2 tsp basil1/2 tsp fennel seed1/2 tsp salt 1/2 tsp red pepper flakes 1/2 Tbsp extra virgin olive oil1/4 t minced garlic 1 t brown sugar (unpacked)
Directions
Set a large frying pan over medium heat, spritz with nonstick cooking spray and add bacon. Cook bacon for eight minutes, flipping every two minutes to keep it from curling up. Place bacon on paper towels to drain. The bacon should still be flexible and soft; it will crisp up on the pizza. Tear into small pieces.

Place tomatoes in a blender along with all the spices, salt, sugar and oil. Blend till smooth and pour into pot. Cook on medium high for 30 minutes or until reduced by half. (SparkPeople note: Use a low-sodium jarred tomato sauce to save time.)

While the tomato sauce is cooking, dice the onions and drain the pineapple.

Roll out the dough into your desired shape and thickness. Place on a baking sheet lined with aluminum foil and sprayed with cooking spray. Preheat the oven to 425 degrees Fahrenheit.

Place 1/2 cup of sauce on pizza. Sprinkle on 1/2 cup of cheese, 1 cup of pineapple and bacon pieces. Sprinkle on remaining 1/4 cup of cheese.

Bake in oven for 14 minutes on middle rack. If you prefer a browner pizza, broil pizza for an additional couple of minutes, watching to ensure it doesn't burn. Once it looks good and brown remove and let sit for 10 minutes to let the cheese firm up a little. Slice into eight pieces.

    This was a great recipe. I made it twice in a row on request from DH. The sauce needs less fennel seeds. I used 1/2 the r.pepper flakes the 1st time and it was too much. Better with just a sprinkle. The 2nd time didn't have any fresh tomatoes so used stewed tomatoes-Yumm! Good w/ whole wheat crust - 12/1/09

    Very good, I used a prebaked thin and crispy crust, also I used 1 can of diced tomatoes, I didn't have any fennel or basil so did without. Fresh pineapple would be better, very yummy, hubby loved it. - 2/27/10

    Sounds wonderful--I will definitely be trying it--with two added additions--extra lean ground beef and Gwaltney's 40% low fat bacon instead of the Oscar Myers. Only 20 calories per slice and JUST as good! - 11/10/09

    Actually the term slice throws off the measurements. If you go by calories per gram the Oscar Mayer Center Cut is actually better(4.16cal/gram versus 4.28). It's just that Oscar Mayer slices are larger, so 2 slices are 50 cals instead of 3 slices being 60. It's best to compare by weight sometimes.

    The gazpacho actually makes a great side dish for the pizza. It keep you from eating the whole pie yourself, and is full of great veggies. Try making a double batch of the sauce and reserving half for gazpacho. It can chill while your doing the rest of the cooking and you have a nice healthy meal.

    It really depends on the tomatoes and the cooking time. I generally have enough sauce for two pies. The longer you cook it down the more the sugars develop and the more reduction. However, over-reducing can burn the sauce. If you want to store some, make a double batch and freeze the extras.

    Used the SP Whole Wheat Pizza crust recipe for the base. Don't forget to add the onions along with the bacon and pineapple. I think I might be tempted to omit the bacon, as I didn't get a lot of flavor from it. Sub black olives, peppers, maybe mushrooms? More veggies, less calories. - 9/27/10

    I substituted red pepper for pineapple and added more cheese (my husband loves cheesy pizza) and it turned out great! I loved making my own suace and it was so easy! I felt the sauce didn't need to be reduced-I don't know if I used small tomatoes or what but it just fit my 12in pan. Great Recipe - 12/14/09

    Awesome. Forgot to get fennel seeds. I wanted to double the recipe, so I added diced tomatoes. I didn't use the minced garlic or basil. Used Mrs. Dashes Tomato, Basil and Garlic. It all worked nice. I will make this again in a heart beat. My husband and son also loved it, too. - 2/27/11
