Unstuffed peppers - low carb - Crockpot

1.5# Beef, browned, degreased, seasoned with onions and beef soup base (smountd shown separately below)2 T. Beef soup base1/2 c. (8 T.) onion, dried, chopped2 cans (15 oz each) Tomatoes, diced2 cans (15 oz each) Tomato sauce1 c. Green peppers, frozen, diced (or to taste)Water to cover.
Makes 16 1 cup servings with only 99 cals/cup.
Lightly coat sides and bottom of 5 qt. crockpot with spray oil (not included in nutrition count).
Brown hamburger, drain grease, add soup base and onions.
Add all ingredients to crockpot.
Stir and cover.
Cook on HI for 2 hours or on LOW for 4 or more hours for thawed hamburger. If using frozen seasoned hamburger, increase cook times 1 hour (HI) to 2 hours (LOW).
Leftovers freeze well.
STOVE TOP PREPARATION: Use large pot that will hold at least 5 quarts. (If necessary, make sure to degrease hamburger before continuing.) Bring all to boil, then simmer for 1/2 to 1 hour.
OVEN/CASSEROLE PREPARATION: After hamburger is prepared and seasoned, mix all ingredients in large bowl, then transfer 1/2 to casserole dish. Freeze other 1/2, or cook in second dish for a large crowd.)
NOTE: FOR LOW SODIUM DIET:, use pepper instead of beef soup base, and use low sodium tomato sauce and low sodium diced tomatoes.
NOTE: If you want to delay start this before you go to work, plug in an off/on (lights) timer between the crockpot and the electrical outlet; set it to go on 2 to 4 hours before you arrive home..

Very good will make it again. Don't have crock pot so sauteed green pepper and onion a little before finishing in the oven. Easy tasty. - 11/5/09

If you use frozen green pepper and dried onions, it is quicker and the taste is the same. Glad you liked it.
HOWEVER, the number of servings depends on how much water you add. To be on the safe side, use 12 servings instead of 16, bringing the cals to about 132/cup. Still low cal!
