Ingredients
For the sweet potato chips:1 sweet potato (with skin still on)1 TBSP olive oil2 tsp brown sugar1/4 tsp cinnamonCooking sprayFor grilled cheese:2 slices Mrs. Bairds 100% sugar free whole wheat bread1.5 tsp Spicy brown mustard.5 TBSP Land o Lakes salted whipped butter 1/4 cup Kraft 2% shredded sharp cheddar cheese1/4 cup Amy's Tradition refried beans - light in sodium
Directions
Start with sweet potato chips since these take some time. Preheat an oven to 400 degrees and spray a cooking sheet with cooking spray. As thinly as you can, slice a sweet potato into chips. Mix sweet potato chips, 1 TBSP olive oil, 2 tsp brown sugar and 1/4 tsp cinnamon in a big plastic bag. After everything has mixed, spread chips on the sprayed cooking sheet and cook on one side for 20 minutes, then flip and cook 10-15 more minutes depending on how crispy you want your chips. The thinner you can slice the chips the crispier they will be!

While the chips are cooking, you can quickly make the grilled cheese. Preheat a skillet. Warm up beans in microwave so they will not be cold in the sandwich. Cover both slices of bread with spicy brown mustard. The mustard will be the glue that makes the cheese stick to the bread. On one slice, add 1/2 of the .25 cup of cheese then top cheese with the heated beans. On top of the beans add the other 1/2 of the .25 cup of cheese. Now add your butter to the skillet. Once the butter melts, rub both slices of your bread in the butter (mustard + cheese/beans up). By rubbing your bread in the melted butter you have now buttered your bread without a mess! Then top your sandwich with the other slices of bread and cook like a normal grilled cheese!

That's all it takes! I enjoy ketchup with my chips, but I did not include that in the nutrition numbers. This makes one sandwich and a good serving of sweet potato chips! Good luck!!

    This recipe has .5 tbsp of whipped butter which is 25 calories and 2 tsp of brown sugar which is roughly 22 calories. All things in moderation. Compared to what this meal would be if eaten out, this is not unhealthy at all.
