Low-Fat Oatmeal Muffins

Ingredients
1 cup old fashioned oatmeal1 cup skim milk (nonfat works well too)1 cup whole-wheat flour1/2 cup brown sugar, packed1/2 cup unsweetened applesauce2 egg whites1 tsp baking powder1/2 tsp baking soda1/2 tsp salt
Directions
1. Mix oats and milk and let sit for 1 hour.
2. Mix all ingredients in a large bowl.
3. Spoon into a lightly greased muffin pan.
4. Bake at 400F for 20-25 mins.
5. For variation you can add raisins, chopped nuts, banana, cinnamon, or even chocolate chips to batter.

    This is one of my favourite recipes! I have tried it with regular brown sugar and with Splenda brown sugar, and it works very well both ways. I just used normal quick oats and didn't bother with the soaking part and it worked fine. I made tons of these and froze them (they freeze well). Yum! - 11/23/10

    These were ok. I wasn't terribly impressed. They were not very flavorful and not as sweet as I usually expect muffins to be. I baked them for 17 min. and they were definitely done, which is less time than the recipie says. - 12/12/08

    i accidentally dropped a yolk in and added some ground flaxseed along with craisins and frozen blueberries. The taste was ok. i baked them at 400 for 18 minutes, but live at high elevation, so i'm not sure if i did something wrong because they seemed well done when i took them out. - 8/13/11

    Great base recipe. Variations: Add 1/2 c. ea. cocoa & choc.chips. Add 1/2 c. grated apples, carrots, or zucchini or mashed pumpkin or sweet potatoes; spices (cinnamon, nutmeg, cloves, etc.) and/or nuts, raisins, Craisins. Add or subtract 1-3 Tbsp. applesauce depending on moistness of add-ins. - 10/31/10

    Hi MISSPENN - I'm wondering how the sugar content of less than 2g per serving can be correct. The brown sugar alone has 146.7 grams of sugar in it, which comes out to 12 g per muffin - did you leave something out of the ingredient list? Thanks. - 8/12/10

    Chewy and sweet. I cut the recipe in half for just myself, but think I could eat a dozen easily! Adding cinnamon definitely ups the flavor factor. - 7/30/10

    These are REALLY good!!! I made them w/1% milk and w/Splenda Brown Sugar Blend. The bake time was only 18 minutes. My daughter has already eaten two of them :) I wish they were a bit bigger, but I will definately make again. - 7/29/10
