Roasted Chickpeas/Garbanzos

Ingredients
3 tablespoons olive oil 1 (16 ounce) can chickpeas or garbanzo beans 1 tablespoon finely chopped fresh garlic salt and pepper
Directions
Drain can of chickpeas/garbanzos very well.
Toss drained chickpeas/garbanzos, garlic, oil and seasonings together in bowl.
Spread mixture onto large shallow pan so that the chickpeas/garbanzos are in a single layer.
Put into 400 degree oven for 15-20 minutes shaking occasionally.
Remove from oven and let cool for a few minutes.
Enjoy! Try mixing it up and add/eliminate seasonings.

    I love these. I do use bagged chickpeas to lower the sodium as well. I like mine spicey so I added some cayenne, cumin and New Mexican Chile powder. I also use a lot less oil. Only 1 tbsp. - 4/27/08

    I made 1 cup dried garbanzos with this - soaked overnight - looking to lower sodium. Made it into 4 servings. I guess I shouldn't refrigerate them afterwards? Went to eat them and they are 'soggy', so popped them into oven for 5 minutes to crisp up. Good way to get extra fiber/protein. - 10/5/07

    Hmmm. The head of the recipe says "minutes to cook: 40." But the instructions say 15-20 minutes. Maybe that's why they didn't crisp well for me? I'd definitely cook longer next time, and maybe at a lower heat after the first 20 minutes. - 2/15/16
