Mary's Tortilla soup(w/o rice or toppings)

Ingredients
6 cups of chicken broth.2 T olive oil1 large chopped onion.5 cup of chopped or julianned carrots3 cloves garlic1 med pablano pepper, chopped1 cup of fresh or refrigerated salsa1 can diced tomatoes1 can sweet corn1 can white kidney beans3 cups of chopped or shredded chicken3T taco seasoning1 Tablespoon parsley1 t salt
Directions
Chop and saute all the vegetables and garlic in the olive oil. Once soften and lightly colored add salsa. In the mean time bring chicken broth to light boil adding seasoning, corn, beans, and tomatoes.
In sauce pan heat chicken with 1 ladle of soup and taco season, add to soup. Cook for 20 mins on med low heat.
To serve place .5 cup of brown rice(add separately to nutrition chart) to a bowl and ladle 1 cup of well stirred soup over top. Top with your choice of toppings... avocado, cheese, sour cream , tortilla chips or strips.
