2 large eggs1/2 c. Applesauce, unsweetened1/4 c. oil1 c. white sugar3/4 c. brown sugar29 oz. can Pumpkin1 T. Vanilla (I used Watkins)4 tsp. Pumpkin Pie Spice (I used Watkins)2 tsp. baking soda2 tsp. salt1 tsp. baking powder3 c. whole wheat flour1/4 c. wheat germ1/4 c. milled flax seed2/3 c. water (or use Soy milk to boost protein)Choc. chips (2 c.) optional; Ghiradelli white or semi sweet dark (not included in calorie count)
Directions
Makes 2 large loaves; or 24 good sized muffins; Bake at 350 degrees until toothpick comes out clean.
