Breakfast Casserole

Ingredients
1 pound Sausage, browned8 eggs - slightly beaten2 cups milk1 tsp salt1 tsp dry mustard6 slices bread - crumbled fairly fine1 pound Velvetta cut into small pieces
Directions
Mix all ingredients together and place in a casserole dish. Let set in the refrigerator overnight. Take our and let set at room temperature for 30 minutes. Bake at 350 degrees for 45 minutes.

This recipe can be made lower in fat by using low fat sausage, light Velvetta, 1% or skim milk and low calorie bread.

    I subsituted ground turkey (seasoned with taco seasoning) for the sausage and added green pepper, tomatoes, onion and mushrooms. I also reduced the cheese to 4 ounces of colby/cedar. Served it with a spoonful of salsa and a (small spoonfull of fat free sour cream) Everyone loved it! - 4/27/08
