Simple Peanut Butter Cookies

Ingredients
1 cup peanut butter, creamy or crunchy 1 cup Splenda, granulated1 egg, beaten 1 teaspoon vanilla extract For the top: 1.5 - 2 tsp. sugar
Directions
Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, Splenda, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Dip the balls in sugar and place sugar side up, on the baking sheet. Press a crisscross design on each cookie using a fork.

Bake for 12 minutes, Cool slightly before removing from pan.

Makes 20 cookies.
