Microwave Peanut Brittle

Ingredients

1 cup white sugar1/2 cup corn syrup1 1/2 cups peanuts1 tsp butter1 tsp vanilla extract1 tsp baking soda
1. Combine sugar and corn syrup in a large microwave bowl. Stir until well combined.
2. Microwave on HIGH for 4 minutes. Add 1 1/2 cups peanuts and microwave on HIGH for another 4 minutes. DO NOT STIR.
3. Add butter and vanilla extract and micowave for additional 2 minutes on HIGH.
4. Add 1 tsp baking soda and stir well. Mixture will foan up and be very hot.
5. Spread this very hot foamy mixture immediately onto a well greased baking sheet and spread out as well as you can with a buttered knife. Let it cool well. Break into pieces when cool.
6. Keep in a covered container or place into individual bags or jars as desired.
