Easy Veggie Stir Fry with Couscous

Ingredients
1 block firm tofu1/2 cup mushrooms, pieces or slices1/2 cup green pepper, cut into strips1/2 cup red pepper, cut into strips1/4 cup onions, chopped1 clove garlic, minced2 tbsp olive oil2 tbsp lite soy sauce1/2 cup dry couscous1 cup water
Directions
Cut tofu into 1 inch cubes and pat dry with paper towel.
Saute all the veggies & the tofu in olive oil for 5 minutes until mushrooms & tofu start to brown.
Add 1 cup of water, cover & bring to a boil.
Add couscous & soy sauce, remove from the heat, stir & cover until all liquid is absorbed.
Enjoy!
I like to use flavored tofu such as onion & garlic, or chinese spiced for more variety.
