Savory Black Beans and Rice

Ingredients
Note: not strictly vegetarian (contains chicken broth), but no other Main Category description fits :-)Ingredients:• 1 1/2 cups chopped onions • 1 cup chopped sweet green pepper • 1/2 cup diced celery • 2 cloves garlic, minced • 1 can (28 oz) tomatoes, un-drained, diced • 1 1/4 cups low sodium, reduced fat, chicken broth • 1 cup uncooked long grain white rice (basmati is nice) • 2 tbsp tomato paste • 1 tsp each, chili powder, dried oregano, and ground cumin • 1/2 tsp each, ground thyme and black pepper • 1/4 tsp cayenne pepper • 1 can (19 ounce) black beans, drained and rinsed
Directions
Instructions:

Spray a large saucepan with non-stick spray. Add onions, green pepper, celery and garlic. Cook over medium heat until vegetables are soft, about 5 minutes.
Stir in remaining ingredients, except beans. Bring to a boil. Reduce heat to medium low, cover and simmer for 25 minutes, stirring occasionally.
Stir in beans during last 5 minutes of cooking time.
(Serve with a tossed green salad)

    I found that the recipe actually served six quite easily. It was very good--savory but not TOO spicy. I might try adding a second can of black beans the next time (and adjust the calorie count!) - 4/19/07
