Greek Marinade for Chicken Breast

Ingredients
4 skinless boneless chicken breast1/4 cup Realemon Juice4 Garlic Cloves - sliced fine2 tbsp of Italian Seasonings ( i used Clubhouse brand)1/2 cup light olive oil1/4 tsp saltfresh ground pepper - to taste
Directions
Makes 4 servings
Put all ingredients in a ziploc bag for 30 minutes to over night in refridgerator.
*note - Pierce the chicken breast with fork trust me this wont dry out the chicken just enhances the marinade.

Remove chicken from ziploc and place on hot bbq grill.
Discard marinade.
Cooking time between 10 to 20 minutes depending on the thickness of the chicken breast. Make sure the juices run clear.

The chicken is going to be unbelievably moist - my hubby is always shocked because it is skinless and yet so juicy.

Serve with roasted veggies and rice - ENJOY :)

    I did some adjustments. I cut the oil down to 1/4 cup and added 1/4 cup white wine. I used it to marinate 3.5 lbs of chicken breasts. I did grill them and they were indeed yummy! Since I used it to marinate so much chicken, I think I would use a bit more salt. - 4/30/12
