Cheesy Spinach Fritatta

Egg, fresh, 2 extra largeLiquid Egg Whites, 6 TbspLowfat Cottage Cheese, 1 cupReal Bacon Bits, 3 TbspCayenne Pepper, 1/8 tspSalt & Pepper to tasteOnions, raw, 0.50 large Spinach, fresh, 3 cup
Gently beat eggs, bacon bits, and cottage cheese together with seasoning in a bowl. Set aside.
Spray a large skillet with cooking spray and cook onion over medium-high heat. Reduce heat to medium-low and add spinach. Cook until Spinach is reduced and soft.
Pour egg mixture into skillet over spinach, bacon and onion, and gently stir to mix. Cook without stirring until bottom is just set, then move pan into the oven and broil on low until top is set and just beginning to brown.
Cut into 8 pie-shaped pieces and serve immediately. (2 pieces = 1 serving)

This was very good! I used garlic instead of onions and frozen spinach (nuked and squeezed of water), and added baby bella mushrooms. The topping was asiago cheese. Very filling. - 6/30/09

Yum, I love the idea of adding mushrooms and asiago cheese. I'm going to try that too!
