1 lb chicken, boneless and skinless1 cup frozen corn kernels1 can of black beans, rinsed2 cloves garlic1 small onion chopped1 can of diced tomatoes1 Tbls Chili powder1 teaspoon paprika1 teaspoon cuminsalt and pepper to taste1/2 cup chopped cilantro
salt and pepper the chicken and saute in skillet on medium heat that has been prepared with cooking spray. When the chicken is almost cooked through on both sides, add the onion and saute for a few minutes more. Then add the frozen corn, can of black beans that have been rinsed, garlic, can of tomatoes and spices. Cover and simmer on low for 10 minutes. Can be served over rice.

I served this over brown rice and topped it with just a bit of grated cheddar cheese and fresh avocado. The spice blend was great even though I did not have cilantro it was very good without it. I will add this one to my list of favorites. Very quick to cook with flash frozen chicken breast! - 3/9/11

This was a great dish I wanted t so bad I could taste is before it was done! I did have to do some substitues only because some of the ingredients I did not have on hand I used a black bean salsa and tabasco sauce in place of black beans and chili powder reminds me of chicken chili it was delicious - 2/20/09
