Blue Berry Muffins (Tweaked) - VERY Low Fat/Low Cal.

Ingredients
1-3/4 C. Flour 4 Tsp. Splenda 2 Tsp. Baking Powder 1/2 Tsp. Salt 1 C. Skim Milk 1/4 C. Egg Beaters (= 1 Large Egg) 1-1/2 Tbsp. Light Margarine, Melted 3/4 C. Blueberries, no sugar added
Directions
Preheat oven to 400 and spray a 12 cup muffin tin.

In a large bowl, combine dry ingredients. In a small bowl, combine the milk, egg beaters and melted margarine. Add blueberries to flour mixture and fold gently. Pour liquid mixture over dry ingredients and fruit and stir until just blended.

Spoon the batter into cups, filling about 2/3 full. Bake 20-25 min., until a toothpick inserted in center comes out clean and muffins are golden brown. Cool in pan on a rack for 5 min; remove from pan and serve hot.

Makes 12 servings - 1 muffin/serving.

    great recipe! I also sprinkled som esplenda brow sugar on top with some extra berries before baking. I also added exta tsp od splenda to the mix as the other comment suggested. Really great and yummy!! Low fat and low calorie satisfying snack! - 8/14/10
