Salmon Patties

2 T unsalted Butter1 sm Onion, minced4 cloves Garlic, minced1- 14.75 oz can Bumble Bee Wild Alaskan Pink Salmon1/2 t Morton Nature's Seasons1 t dried Basil1 slice Wheat Bread crumbs (about 1/4 c) 1 T Kraft Mayo with Olive Oil1 stalk Celery, finely chopped1 Egg, extra large1 T Olive Oil1/4 c Flour
Melt butter in skillet and add onions and garlic. Cook until soft and translucent. Remove from heat let cool.
In a lg mixing bowl, combine salmon (you can remove bones if you'd like), seasonings, bread crumbs, mayo, celery, and eggs. Mix well. Add onions and garlic when cooled and mix well. Form into 4 patties, cover with plastic wrap, and refrigerate for 30 minutes to an hour.
Dredge patties in flour. Heat oil in lg skillet over med heat. Fry patties until outsides are crisp and browned, about 4-5 minutes per side.
Makes 4-4inch patties/ 4 servings
