Ingredients
4 teaspoons red Thai curry paste4 spring onions, sliced4 cloves garlic, chopped fine1 cup brown rice, cooked1 cup frozen peas200g shrimp, cooked1 tbsp fish sauce2 tbsps soy suaceJuice of 1 lime2 eggs, beatenSmall bunch coriander, chopped
Directions
Heat the curry paste in a large frying pan. Fry the onions and garlic for 5 minutes until softened.

Add all the other ingredients except the eggs and coriander, and stir fry for 5 minutes.

Push the rice mixture over to one side, and pour the egg into the gap. Cook as you would scrambled egg until just set, then mix into the rest of the dish. Stir through the chopped coriander and serve.
