Healthier pumpkin bread

Ingredients
1 C sugar1/4 C butter3 eggs (or 1 egg plus 2 whites)approx. 1.75 C pumpkin puree (use the whole can)1/3 C nonfat milk (can use water)1 teaspoon vanilla2 C whole-grain flour (any combination oats, barley, wheat)1/4 teaspoon baking powder1 teaspoon baking soda1 teaspoon salt1 teaspoon cinnamon1/4 teaspoon ground cloves
Directions
Cream butter and sugar together. Add pumpkin, eggs, milk and vanilla. Stir in dry ingredients. Pour into loaf pan.

Bake at 350 degrees F for about one hour. Test for doneness by inserting a knife or pick. It is done when knife or pick comes out mostly clean.
