Vegan Steel-Cut Oatmeal Craisin Cookies

Ingredients
2 cups Trader Joe's Quick Cook Steel Cut Oats1.5 cups whole wheat flour1 cup unsweetened apple sauce.75 cups Craisins (or other dried fruit).25 cups Splenda Brown Sugar Blend5 tbsp ground flax meal6 tbsp water2 tsp ground cinnamon1 tsp vanilla extract1 tsp baking powder.25 tsp baking soda
Directions
Preheat oven to 375 degrees F.

In a small bowl, whisk together the flax meal and water until it becomes a bit gooey and gelatinous. Set aside.

In a large bowl, combine the apple sauce, brown sugar, flax meal mixture, and vanilla. Mix until sugar is thoroughly wet. Add remaining ingredients except for Craisins.

When mixture is combined thoroughly, add Craisins and mix.

On a lightly floured cookie sheet, put tablespoon-full sized balls of dough about an inch apart. (They do not grow in size.) Lightly press down on the top to make them into a cookie shape, as they do not spread out on their own.

Bake at 375 for 15 minutes or until golden.

Yields approximately 42 cookies.

    This looks SO GOOD! I was thinking about making them into steelcut oatmeal bars instead of cookies. I just have a question - I only have ordinary steelcut oats, not the quick cooking kind, but I'll just let it soak overnight :) - 6/25/11
