Catfish stew

Ingredients
1.5 cups brown rice20 oz. catfish fillet1 red pepper1/5 cups okra1 onion4 cl. garlic1 stalk celery1 14oz. can diced tomatoes.5 cup frozen corn1 tsp.Tony Cacheres Cajun seasoning (or to taste)2 handfuls fresh collard, mustard or turnip greens.
Directions
Boil 3 c. water. Add brown rice, cover and cook 45- 50 min.
Spray large skillet with olive oil.
Chop onion, garlic, celery peppers and add to pan. Cook until just softened. Add okra and corn and cook additional 5-10 min. until softened. Add tomatoes and bring to a simmer. Chop catfish into 2" pieces. Place greens and catfish on top of skillet, cover and cook until collards and catfish are cooked through. Add cajun spice to taste.
When rice is done, spoon into a large serving bowl, top with catfish and veggies and serve.
