Crunchy Catfish Nuggets

Ingredients
1/2c plain bread crumbs1/2 teaspoon seasoning (Cajun, Creole, or Italian)1tsp chili powder1/4tsp ground pepperFour 4oz catfish fillets, cut into nuggetsFat free cooking spray
Directions
1. Preheat oven to 425
2. Line cookie sheet with foil and spray with cooking spray. Pre-heat tray for 2 - 3 minutes
3. In large bowl combine bread crumbs, chili powder, and pepper.
4. Coat nuggets with cooking spray. Dip nuggets in mixture, cover completly
5.Place nuggets on cookie sheet and bake for 12-15min.

Can be served with hot sauce, reduced fat dressing, or lemon juice

    My husband loved this! I used the same proportions bread crumbs to spices, and substituted Old Bay Seasoning for the cajun powder,chili powder and pepper. I loved the coating. I baked the catfish at 450 degrees for 25 minutes. (Different oven!) It was a satisfying dish! - 5/8/09

    Too spicy for the little one, but I loved it. I am always looking for good fish recipes and this one will be staying in my recipe box for future use. Will leave out the chili powder next time and maybe add some parmesan cheese. - 3/17/08

    3 stars for flavor. Fried catfish is generally finger food and this wasn't. I used cornmeal and it didn't all 'cook'. I think your nutritional value is off. Four 4oz pieces of fish (one serving?) for 170 calories isn't feasible. - 7/17/09

    OMG this came very close to fried. Used what I had Canola spray, corn meal will use bread crumbs next time. Ms. Dash and Lite season salt, preheat at 450 and turned as it browned. I will try Talapia and shrimp this way too. Nice meal and not greasy and family enjoyed it too. tyvm - 10/30/11

    My husband made this and shrimp stir fry, it was delicious. He used egg beaters and different seasonings to his taste. But you can season anything to your liking. Our three year old really liked it. This will be a fave in our house - 2/22/11

    I figured the 1 tsp of chili powder was a general amount & would be ok for me, someone who really doesn't do spicy foods. Big mistake! Too hot for me. My boyfriend loved it though (he's a lover of spicy food). Next time I will substitute the chili powder for something else. - 3/19/10
