Sun-dried Tomato crusted Haddock

Ingredients
120g fillet Haddock (can use other white fish)2 tbsp chopped sun-dried tomato1tbsp extra light olive oil (substitue low-cal spray if desired)1 cup of boiling water
Directions
Preheat oven to 110C
Pour olive oil evenly over the haddock fillet
Spread the chopped sun-dried tomato over teh top of the fish
Place the fillet in an oven-proof dish with 1 cup of boiling water. Bake for 20mins

Serve with 1 cup of spinach or a fresh side salad
