Miracle Noodle Sesame Noodles

Ingredients
Natural peanut butter, 4 tbspMiracle Noodle, 14 oz (2 pkgs)Bean sprouts, 1 cupCabbage (slaw mix or plain), fresh, 2 cup, shreddedRice Vinegar, 2 tbspSesame Oil, 1 tbspSriracha - Hot Chili Sauce, 2 tspSesame Seeds, 1 tbspScallions, raw, 4 medium (4-1/8" long)
Directions
Open bag of Miracle Noodles into a colander and rinse with warm water for a couple of minutes and boil for one minute, pat dry with a paper towel or small hand towel. Cut noodles with scissors to make smaller pieces.

In the bottom of a large bowl, whisk together soy, peanut butter, vinegar, sesame oil, and hot sauce. Add noodles and veggies and toss to combine the noodles and coat them evenly with sauce.
Sprinkle scallions and sesame seeds throughout the salad and serve.

Or you can heat the sauce for a couple of minutes in a sauce pan, then add noodles and serve hot! It’s makes great leftovers the next day!!

    This recipe talks about soy in the text, but I do not see it in the ingredients. Guess I will put some in and see how it goes - maybe a 1/4 cup to start..... - 3/22/11

    The shirataki noodles do take a lot of rinsing, but are a good substitute for grain-based noodles. As for the soy sauce, I just added 1 tsp. and put the soy sauce on the table for whomever wanted more. - 11/8/19
