Ingredients
-
1 box Devil's Food Cake Mix
1 can pumpkin
20 marshmallow Peeps (they come in sets of 5)
Chocolate Frosting
Chocolate chips
Because you are using 20 Peeps, I find it easiest to cut this cake into 20 slices - that way everyone gets one Peep!
Directions
Preheat oven to 350. Grease two round cake pans.
Mix cake mix and pumpkin.
You will want to add more liquid, BUT DON'T! It will look small in your cake pans, but will work. Just ease it to the edges so that it only has to expand up.
Bake cake until inserted knife comes out clean - 20 to 30 minutes.
Let cool in pan 15 minutes before transferring to cooling rack. Let cool on rack 20 minutes. If the cake tears in any way during transfer, don't panic. The icing will hide it!
Stack cake rounds, using a layer of frosting in between. Cover cake in chocolate frosting. Then, keeping the Peeps connected, stick the to the edge of the cake, upside down.
Add chocolate chip "seed" to middle and Voila!
Makes 20 Peep-size slices. Normally, a cake this size would serve 12, however, the Peeps make it easy to cut this one into 20 slices. It is GREAT for portion control!
