Ingredients
-
2 cups white flour
1 cup wheat flour
1.5 tsp baking powder
1 Tbs canola oil
1 cup water
2 tsp canola oil for frying
1 medium onion
1 can black beans
1 can fat free refried beans
2 oz cheddar cheese, shredded
Directions
To make the tortillas:
Mix the dry ingredients, slowly adding water and 1 Tbs oil. Knead and let rest. Roll into 8 small balls. Roll each of these out with a rolling pin (as thin as possible) and cook in an oiled pan over medium heat.
Chop and cook the onion in another tsp of canola oil. Add the can of black beans and refried beans. Season with salt, cumin, chili powder, cayenne pepper, and garlic powder for maximum flavor. Shred and add two ounces of cheddar cheese.
Put a dollop of the bean mixture in the center of a tortilla and fold the top and bottom in. Hold the top and bottom down as you fold the sides, creating a packet-style burrito.
This recipe makes eight. Any you don't eat, you can wrap individually in foil and freeze/reheat later!
