Ingredients

    3 1/4 -1/2 c grated potatoes
    1 medium onion, chopped
    2 eggs
    1/2 c flour
    1 tsp salt
    1/2 tsp pepper
    2 Tbsp oil for frying

    Mix and fry. Serve with applesauce

    Same recipe my mom makes. Love them with salsa, the hotter the better. Substitute the salt and pepper and add cajun seasoning to taste. Gonna try baking them instead of pan fry. - 11/30/11

  • I used 4 med unpeeled red potatoes, egg beaters and Pam cooking spray. They were great!

  • these pancakes were great! I made them just the right size too for the 16 quantity. I agree with mom2alex2004, they do need a bit more time than regular pancakes to cook through. Thanks for sharing!!! - 10/9/08
