Ingredients

1 1/4 cup old-fashioned oatmeal
1 c skim milk
1/2 c all-purpose flour
1/2 c wheat flour
1/3 c sugar
1 t baking powder
1 egg, beaten
1/4 c applesauce
1/2 t vanilla extract
3/4 c fresh blueberries
Directions
Preheat oven to 400
Mix oatmeal and milk in small bowl, leave to soak.
In mixing bowl, combine flours, sugar, and baking powder.
Add in wet ingredients: oatmeal mixture, beaten egg, vanilla, and apple sauce. Mix to incorporate the dry stuff.
Add blueberries and stir gently. Fill muffin cups about 2/3 full. Bake for 20 minutes.
Makes 15 muffins.
