Ingredients

    Wet mix:

    2 eggs
    2tbs heavy whipping cream
    salt & pepper
    1 tsp hot sauce (I use Louisiana Hot Sauce)

    Dry mix:

    1 1/2 bags of pork rinds
    1 tbs dry Ranch Dressing mix
    1 tbs garlic powder
    1 smoked paprika
    1 tsp black pepper
    1tsp season salt
    Grind in food processor until the consistency of bread crumbs

    4 skinless, boneless chicken breasts, pounded to about 1 inch thick and then cut into tenders. About 6 pieces per breast.

Directions

Dredge chicken in egg mixture and then in pork rinds. Heat oil in skillet to about 350, about 1/2 to 1 inch deep, place chicken in hot oil in small batches, do not crowd. Cook 3-4 min per side. Drain on paper towels.

My dipping sauce was 2 tbs of ranch dressing with hot sauce added for a little zing. This added 2 carbs. Chicken is 5 per serving.
