Low GI Cauliflower Crust

Introduction

People will have NO idea the crust is made from veggies and cheese! People will have NO idea the crust is made from veggies and cheese!
Number of Servings: 8

Ingredients

    2 cups shredded fresh cauliflower
    2 cups shredded part skim mozzarella
    2 tbs shredded parmesan cheese
    2 eggs
    1 tsp italian seasoning
    dash salt and pepper

Directions

Preheat oven to 425 degrees. Grate cauliflower into a bowl, combing with cheese and seasoning. Beat eggs in smaller bowl and pour into cheese cauliflower mixture. Press onto cookie sheet or pizza pan lined with parchment paper and press into a circle -do not make too thin. Bake for 15-20 minutes. Top and enjoy!!!

Serving Size: Serving size is 1/8 of pizza (makes a large size pizza)
