Ingredients

    16 oz bag refrigerated diced potatoes with onions
    14 oz can chicken broth, reduced sodium
    1 small celery stalk, diced or chopped
    1/2 cup water
    2 tbsp real bacon crumbles
    1 tbsp plus 2 tsp all-purpose flour
    1/2 cup milk
    1 cup colby jack shredded cheese

Directions

In a 2-quart slow cooker, combine diced potatoes with onions, chicken broth, celery, and water. Cook for 5 hours on low or 2 1/2 hours on high, then add bacon crumbles. Cook for 1 hour on low or 30 minutes on high so bacon flavor soaks into soup. Combine flour and milk in bowl until smooth, then add to soup and stir in. Turn slow cooker to high and cook for an additional 20-30 minutes. Stir in cheese just before serving.

This version of this recipe makes 3 servings -- perfect for singles or couples. You could also double it and use a 4 or 5 quart slow cooker to make this for a larger family.
