Ingredients

    1 TBLS Chia Seeds, ground
    1 Cup Whole Wheat Flour
    1/2 Cup White Flour
    2 Tsp Cinnamon
    1/2 Tsp Nutmeg
    2 Tsp Baking Soda
    1/2 Tsp Salt
    16 oz can pure pumpkin
    2 eggs
    1/2 cup Extra Virgin Olive Oil
    1 Cup Pure Maple Syrup
    1 TBLS Vanilla
    1/2 cup Chopped Walnuts

    Mix together all of the dry ingredients.
    Mix together all of the wet ingredients.

    Fold Wet ingredients into dry ingredients.
    Pour into greased or lined muffin pan and bake at 350 degrees for 25-30 minutes.

    I loved this. Not sure why the calorie count of this recipie is different that that of the other same recipe listed on this site. ALSO, I made a batch using apple sauce instead of the olive oil - VERY GOOD and lower calorie - 3/22/08

    My co-worker made these and shared them with me. I wasn't sure I would like it since I am not a fan of anything pumpkin but I was surprised. They were pretty good and filing. - 3/5/08
