Ingredients

4 roasted chicken breasts
clarified butter
flour
salt
pepper
milk
whole wheat pasta
spinach
Directions
Roast chicken ahead of time by baking lightly seasoned chicken breasts at 375 for about 45 minutes...set aside.
Prepare pasta per package instructions...set aside.
Melt butter in sauce pan. Stir in flour, salt, and pepper until it pastes up into clumps. Stirring constantly over low heat add half of the milk. Once the mixture smooths out and almost comes to a boil add other half of milk continuing to stir constantly until sauce thickens.
Place prepared pasta in serving bowl. Stir sauce over pasta and combine until pasta is well coated. Slice chicken breasts into strips and stir into pasta and sauce.
Serve spinach on the side or mix in.
