Easy Chicken Zucchini

Introduction

This is very easy, very delicious recipe that i came up with after eating a unhealthier version of this at my mother in law's house. I never really liked zucchini until i had it in this dinner. Number of Servings: 4

Ingredients

    -4 pieces of lean skinless chicken breast
    -1 cup raw Zucchini
    -2 table spoons of any kind of shredded cheese
    -1 raw onion
    -salt
    -pepper
    -oregano

Directions

Pre-heat oven to 450

Cut Zucchini and Onion into slices

Arrange Chicken breast onto non stick baking pan

Sprinkle chicken with salt, pepper, and oregano

Sprinkle cheese onto chicken

Arrange sliced Zucchini so that its covering the chicken

Arrange onions onto Zucchini

Bake for 30 minutes covered

Makes 4 servings

    Awesome! Sliced the chicken breast, added minced garlic and sautéed everything in a bit of olive oil before baking. We had ours over brown rice. It was absolutely divine! Will definitely be adding this to our rotation. - 8/8/13

    This recipe was just what I was looking for! I just picked zucchini and had chicken breast thawing for dinner! I added some paprika and red pepper flakes, but that is what makes this recipe great--it can be seasoned to taste easily and still remain simple and quick. Thanks! - 8/5/09

  • I was really like this recipe, so did my husband. It was easy, healthy and just plan yummy. I used parmesan cheese and seasoned each layer. I will make this again. - 5/17/11

  • Beautiful, kids loved it as did the grownups. I pounded the chicken breasts out for even cooking. The zucchini kept the chicken beautifully moist. I might also consider gently sauteing the onion and mixing it in with the zucchini. - 5/10/10

  • I had some zucchini and chicken laying around and decided to give this recipe a whirl. Although I forwent the onions and used tomatoes instead. Cut chicken mixed together and added cheese afterwords. It was very good something simple I will probably whip up again! - 4/22/10

  • I added parmesan cheese and a little cajun spices to the chicken. Had to cook it a bit longer than recipe, ended up cutting the thicker part of chicken into smaller pieces. IT TASTED GREAT! So easy to make and everyone LOVED it! Kids liked the chicken and hubby loved it all. - 7/26/08
