Pretty good - I subbed wheat pastry flour for 1.5c white flour & added a few Tbs. of flax & oat bran. While it is very moist, I was a bit disappointed in the taste - I thought it should be a bit sweeter. Then again, since I made it in a 9X13 pan, I was probably thinking "cake" when I ate it. - 8/30/08

I didn't give this a rating, because I was torn. The zuccini bread was delicious, and it was devoured! But the fact that the calorie count was wrong made me upset. Shouldn't there be a check for that? We are here to watch what we eat, & if the recipes aren't accurate, what's the point? - 8/30/08

I made this twice already. It was moist and deliscious. The first time I used allmost all wholewheat flour and almost no oil. I used applesauce. It was really deliscious. The second time I used mostly soy flour, some white flour and a little whole wheat. I wouldnt use that much soy flour again. - 8/29/08
