Ingredients

    2 1/2 cups flour
    1/2 cup cocoa powder
    1 1/2 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    3/4 tsp salt
    1 1/2 cups sugar
    1/3 cup canola oil
    3 eggs or 3/4 cup egg substitute
    1/2 cup unsweetened applesauce
    2 tsp vanilla
    2 cups packed, grated zucchini
    1/2 cup mini chocolate chips



Directions

Preheat oven to 350 degrees. Spray 2 loaf plans with nonstick spray.

In large bowl combine flour, cocoa, baking powder, baking soda, cinnamon and salt. Set aside.

In a medium bowl, whisk together sugar, egg, applesauce, oil and vanilla. Stir in zucchini.

Add wet ingredients to dry indgredients. Stir until just moistened. Fold in Chocolate chips. Spread batter evenly in prepared pans.

Bake for 50 minutes, or until toothpick inserted in center of loaf comes out clean.

Cool in pans for 5 minutes. Remove from pans and let cool on wire rack before serving.

    Incredible!
    I used whole wheat flour - I thought it was a little strong in taste, but everyone else loved it. It adds some calories, but increases fiber. - 9/24/08

    Truly decadent recipe. Took out the oil and subsituted with flaxseed, applesauce and fat free yogurt. Preferred it in Muffin form as it is a really rich bread. Re-calculated into my own cookbook using Splenda and other substiutions. - 9/18/08

    Very good, I took one loaf to work one night and the other the next... everyone loved it! I might skip the choc chips next time as it was very chocolaty I think with just the cocoa. - 9/17/08

    Really great recipe! My husband suggested using raisins instead of the chocolate chips so I think I'll try that next time. - 9/15/08
