Introduction

Ingredients

1 - 1 1/2 c whole wheat flour
3/4 c Old-Fashioned Oats
4 scoops unflavored protein powder such as Any Whey
1 Tbsp + 1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 cup low fat yogurt or buttermilk
2 Tbsp extra light olive oil or coconut oil
1 egg + 1 egg white
1/2 cup honey
2 mashed bananas
1 cup blueberries
Directions
Preheat oven to 375 degrees F.
In a large bowl, combine dry ingredients. In another bowl, whisk together liquid ingredients and banana. (Note: if moist muffins are more important to you than fat content, add more oil, up to 1/2 cup) Pour liquid ingredients into dry mixture, stirring until just combined. Let stand 5 minutes. Lightly stir in blueberries.
Spoon batter evenly into prepared muffin cups. Bake until tops are golden, 20-25 minutes. Serve warm.
Makes 15 muffins.
